A TREASURE BOOK, “LUTÈCE”, By André Soltner

The beloved Chef who wrote this ‘Treasure Book’ I love passed away in January of this year. As the video portrays I have memories and things I want to share with you. His Memorial which I was invited to was quite recent. The turnout included many of the top chefs in the USA. Rightfully so.

His book is pitch perfect in its precision on proper French cooking informed by the best possible produce from many sources. The video shows my personal memories which I hope you will take in.

Before we go I’ll also include the words below by the late, great food critic of New York City fame and acclaim Mimi Sheraton. I asked her a question from my interview series, “Kitchen Conversations with Norman Van Aken”.

NVA: Who is the most important chef of the past 100 years? Why?

MS: I think most important chef of last 100 years would be between Point at “La Pyramide” for training and mentoring so many chefs who innovated and became famous,. Other than that I would say Paul Bocuse mainly because he took chefs out of the servant class. My favorite chef of last 100 years is of course Andre Soltner of late-lamented “Lutèce”.
