In 1992 while working at the Betsy Ross Hotel, now renamed the “Betsy” to make it less tied to the past and shooting for the future, I had found out that Maida Heatter had quietly been in and had dinner the night before. How I found this out I’ll get to shortly. I was working in my little office and wondering how no one on our staff had recognized this genius of American cooking to let me know she was there so I could thank her and send her some special dish I’d been cooking as of late.
A knock came at the door. I yelled, “It’s not locked!” In walked Maida Heatter. Just like on the cover of her books! Smiling radiantly. She had driven all the way back over to the restaurant to Thank Me! On top of that she handed me two bags of her homemade biscotti. One blonde, one dark. It was the beginning of a beautiful friendship.
