Ginger and Scallion Pancakes with Smoked Salmon

I have loved the flavors of Asia since moving to Honolulu for a period of time when I was about 19 years old. This dish combines some key ingredients from the Far East with some French technique, something you will learn in many ways as we cook together!

What you will need

Technology: Laptop computer ONLY


  • 2 whole eggs
  • 2 egg yolks
  • 2 cups whole dairy milk
  • 2 teaspoons kosher salt
  • large pinch cracked black pepper
  • 1 ½ cups all purpose flour
  • ¼ pound butter
  • 1 bunch of scallions, white part only, chopped fine
  • 1 inch ginger root, peeled and minced
  • ½ Scotch bonnet chile, stem and seeds discarded, minced
  • 2 slices of smoked salmon per person
Kitchen Equipment:

  • 1 medium mixing bowl
  • 1 medium large mixing bowl
  • 1 whisk
  • 1 non-stick ‘egg’ pan
  • 1 small ladle
  • 1 pastry type brush to brush the clarified butter onto the non-stick pan
